I have a question and a recipe offering.

First, the recipe. What's lazy about this recipe is that you can put the muffins in freezer bags. Microwave frozen muffins for about 45 sec and enjoy.

you could try this one 1000 classic vegetarian recipes; it's good for stuff like pancakes that I can never remember the ingredients for properly. And it's cheap.

I like the Moosewood Restaurant books, especially Moosewood Cooks at Home - generally more practical, simpler recipes than some of the other ones.

My favourite way to eat tofu is just firm tofu, cut in cubes, and seasoned with 2 Tbsp lemon juice, 2 Tbsp soy sauce, and a little garlic (fresh is best, but powder is fine).

I've heard of the Moosewood books. I'm glad to heare there are practical recipes in it. Looks like my library carries 7 of their books. Thanks for the suggestion!

I'm not giving up on tofu. I just think that I haven't learned to properly cook it yet. Every time I've cooked it, it has tasted bland to me.

My very first veg cookbook was PETA's "Please Don't Eat the Animals." It's got tons of good, simple recipes. My favorites actually include tofu (the tofu chocolate mousse and the lasagna), but there are tons of other good options, from dips to soups to breakfasts.

I'm in luck today. This book is in my library system as well. Thanks for the rec! With 177 cookbooks under vegetarian cookery, it would take me forever to go through the library system's collection to see which books I like.

I love the Moosewood cookbooks! But, for a regular dose of inspiration, I subscribe to Vegetarian Times. A subscription costs about as much as a cookbook, and the diversity of recipes is great.
