I have a question and a recipe offering.

First, the recipe. What's lazy about this recipe is that you can put the muffins in freezer bags. Microwave frozen muffins for about 45 sec and enjoy.

Hi - I recently bought a nifty silicon muffin pan and made blueberry cake-like muffins from a simple recipe. Unfortunately, they ended up tasting too eggy and so now I wonder if anyone has any good simple muffin or cupcake recipes that are vegan so I can use my cool new pan again. I'm a baking moron, so it has to be easy!
