If there was a humane way of killing crustaceans, I'd use it. Sadly, boiling is probably one of the quickest methods of killing in prep. for eating.
As much as I find crayfish and prawns full of tasty goodness, I won't eat bought crayfish. Just, can't.

The UK RSPCA, RSPCA Australia and the Victorian Department of Primary Industry consider boiling to be a inhumane way of killing crustaceans and they along with Fisheries WA suggest ice slurry/cooling for the general public. For crabs pithing is seen as acceptable if done by someone who knows what they are doing ( ... )
