You should read Becoming Vegan by Brenda Davis. It has great information on vegan nutrition. Plus there's a whole chapter on what to do if you're underweight. Some highlights:

-Do resistance training (like pushups or using weights)
-Don't do too much aerobic exercise
-Make sure you're not too stressed (try yoga!)
-Avoid alcohol and cigarettes (or any other addictive substance) because they can alter your metabolism or make you less hungry

***Eat more, especially carbohydrates***
-hummus with whole wheat pita
-pasta dishes
-whole grain cereal with soy milk
-baked potatoes
-muffins!
***Protein****
-nuts and seeds!
-Tofu/veggie slices
-soymilk/soygurt
-beans

-Eat foods that are less bulky and more energy dense
-AVOCADOS!!!!
-Eat more often (5-6 times per day, including 2-3 snacks)
-Drink between meals so that you can eat more food at once

Hope that helps :)

i think she might be talking about the vegan deli slices and i believe you mihgt be talking about the vegetarian cheese even though it shouldnt even be considered vegetarian because of the rennet they use to process the cheese. BEWARE VEGANS! Veggie cheese still has rennet!

Doesn't eating right before bed supposedly make one have strange dreams?

I've only recently been making this connection. I don't know if I care though because the dreams are always interesting.

I'm with everyone else's suggestions - also, I know some vegans that just fry the crap out of pretty much everything. Lots of EVOO. Totally thirding [or fourthing?] avacados! So fatty and oh-so delicious.
