Healthy fats - nuts, avocado, olive oil

Whole grains - whole grain breads, brown rice

I would say that the most important thing may be getting used to eating more often / bigger portions.

Eat more.

I've found that drinking plenty of tasty, tasty beer has given me quite the beer belly. If you want to get in on some of that action, check out http://veganbrewer.blogspot.com

Homebrewers bug me. I don't why, they just do. (As a professional one.) Nothing against DIY or anything, but they all want to be my friend.

There's tons of great vegan beers out there you can buy as is, too. That's part of the fun about micro-brews; the brewers are usually really easy to get on the phone and find out what they use!

See how many calories you're getting from the things you regularly eat. When I first went vegan, I'd sometimes eat a pound of asparagus or broccoli for dinner (which is quite filling), only to find out later that I was eating an extremely small number of calories. NutritionData and CalorieKing are good sites that allow you to check the calorie content of many common (and not so common, sometimes) foods. A rule of thumb is that grains have lots of calories, beans have a fair number but not as many as grains, fruits have fairly few, and vegetables have very few.
