personally, if you think it will be hard to sticking to being a vegan (its even hard in america) i would start slowly. i think going straight for meat but make you sick so start slow by maybe eating cheese. i feel like i would be sick if i ate meat so good luck if you are going to try it.

Your plan sounds good. A slow transition is pretty important. I went vegetarian when to Italy, and the first few times I had dairy, I felt pretty sick. I've heard similar things concerning transitioning to meat.
Also, your trip sounds awesome.

Geez! I'm really sorry to see some of the terribly negative responses in here. I think the best way to protect your body from bad reactions would be to reach some kind of compromise - tell your host families or guides or whatever the things you don't eat while in the States, and inform them you may get sick with it being reintroduced. Then they can try to reduce it in your food or find options a bit better for you, and you can pick out large meat chunks or something and share them with other people, and that way it will be less of a shock to your system than eating, say, a big hunk of beef slathered with cheese. And at the same time, you wouldn't have to worry about eating a bit of lard with your beans, or avoid cheese enchiladas, things like that. You can also decrease the odds of you puking from sudden reintroduction which would make both you and your hosts displeased! Good luck with your trip!

I find it hard to believe that your school's program wouldn't be compatible with mainstream religious dietary mandates - it seems silly that if a student wanted to keep, for example, a strict kosher diet they couldn't go on the trip. I guess it'd be hard for your college to get enough of specific food items to very rural areas, but it really sucks. That said, I have no idea how to make the transition easier. You'll probably get really sick at first, everyone I know who stopped being veg got really ill from meat, and the times I accidentally consumed dairy while vegan I got sick too. I hate to say it, but you probably should switch back to omni a little while before you leave, so that your system will get adjusted somewhat and you won't spend time in Mexico feeling terrible. Although of course eating meat and dairy is terrible for you! :-)
