Vegan dishes in the general theme of quiche?

Let me know if this sort of question is not allowed but my CSA sends us a dozen eggs a week, and as we do not eat them [often], they tend to pile up, and then I invite omni or vegetarian friends over to eat them, usually in quiche form. I had considered going the vegan quiche route, but wasn't sure if next to an egged quiche it was the right way. but thanks for the recipe, i'm sure to try it out some time soon :)

but you are asking in vegancooking. none of us would give you a non-vegan quiche recipe.

also, if you have vegans over to your party, don't you think it might be rude to not have anything they can eat?

(i don't understand this response. i was considering not approving your post because of the mention of you actually using eggs, but pardoned you on the fact that it seemed like you were asking for vegan quiche recipes. did i read your request completely wrong?)

oh, ok, i reread your original question. the way i look at it is if you're having a quiche party, and invite vegans, we would expect to have a quiche at the quiche party. even if we had chinese food, we would feel left out because it's essentially a quiche party. you know? (same thing with a pizza party where we need to eat crudite, potato chips, and olives.)

Ah, I think I must have miscommunicated. I am not looking for quiche recipes at all [though yours looks great!], I am looking for vegan recipes in the general arena of the same type of foods as quiche--so, vaguely european, french, or american-esque. I personally don't like to 'compare' vegan and nonvegan foods. thus having the egg-quiche to use up all the eggs, but then also having equally interesting and that-general-part-of-the-world appropriate dishes. I do not really cook much in that vein, being more eastern influenced, hence my drawing a blank and asking for advice :)

As I understand it you're not looking for a vegan quiche, just a savory vegan alternative for a brunch where egg-based quiche is being served... because any sweet vegan dishes can be shared by all, right ( ... )

Another savory dish I like for breakfast is quinoa, boiled with Rapunzel cubes and some shredded carrots, a little oil or margarine, and plenty of black pepper, plus optional nooch. Again, you can dress it up however you like, before or after boiling, but to me the grated carrot is essential.

ETA As an alternative to the above, I like quinoa polenta: bring 2 cup of water to a boil with a Rapunzel cube (or use your favorite vegan stock). Stir in 1/2 cup quinoa, lower heat and cover. Simmer for 15-18 minutes, until tender. Combine 1/4 cup cornmeal or polenta with a little cold water, add it to the pot, and cook, stirring, for 5-10 more minutes until thickened. Stir in a little margarine and/or some nooch, and serve.

Either of the above is good as a bed for sautéed mushrooms, broccoli, onions, asparagus, spinach and/or other quiche-y vegetables.

i had been experimenting with chickpea flour with different vegetables and spices trying to make a farinata/frittata type thing

Where do you find your chickpea flour? I've only found chickpea and fava bean flour, and I did not like the flavor of it. I'd be super interested in using it if I could find it locally.

we've got a few indian grocers in my area and i get my besan or it's called gram or chickpea flour at one of them (whichever i happen to be nearest at the time).
