Borscht?

I've been wanting to try making borscht for a long while.  I've only ever had pickled beets, so I'm excited to try it!

Does anyone have any really good vegan recipes for borscht?  I've looked around for recipes and they all seem rather different from one another, so I'm hoping for a "proven delicious" recipe.  :)

I know I really love the Borscht recipe in Nava Atlas's 'A Soup For all Seasons" -- don't have access to the book right now, but it might be searchable online...?

brown some onions in a pot.
chop up potatoes, beets, celery, carrot and add them to the pot with water to cover. Bring to a boil.
Add bay leaf and simmer until the potatoes are cooked.
Salt and pepper to taste.

You can sub in golden beets and celeriac if you want. Sometimes I add tofu. I will also throw any other root veggie I have in the pot (except sweet potato which is too sweet). It usually works out pretty well.
