I accidentally bought some silken tofu and I have no idea what to do with it! I've never used it before - it kinda scares me, and I don't really know what to expect ( Read more... )

Silken tofu is a really great egg replacer in baked goods, and you can freeze it for later use if you want to use part of the package. It will turn a funny color and look weird, but the finished product will be fine.

Silken tofu, to me, equals mousse au chocolat! It's great for that!

My sister (who's definitely the cook in the apartment) has used it plenty of times as an egg replacement in cakes and (especially) brownies. Adjust how much silken tofu you use to make the brownies more cake-like or fudge-like. I like mine more fudge-like, so we also stick it in the freezer for a half hour to harden quicker. It's so good! :D
