My beloved omni mother made vegan creamed zucchini for yesterday's family Thanksgiving. Her recipe was something like: shred 15 zucchinis (with the shredding blade on the food processor unless you want to really kill your arm), spread the shreds on a baking sheet, sprinkle with salt to leach out the water, bake at 250F until very soft, mash up with ( Read more... )

Creamy pasta sauces are one of the major things I miss too. I hope your mum finds this one really satisfying!

This sounds delish. My brain immediately went to the "I wonder how wonderful this would be with..." place. I'm thinking this would be fabulous with greens or pumpkin or winter squash or ...? I'm going out to buy cashews now.
