Vegan comfort cooking

I come in search of ideas.  Last week the best friend of a very good friend of mine committed suicide.  She is devastated and I just want to take care of her.  My main way to show my love to people is to cook for them, and in a situation like this where there are no words this is the best that I have ( Read more... )

How about veggie lasagna with Daiya cheese? That can be frozen and reheated easily. Bean chili and cornbread, curry w/rice or noodles, and roasted squash enchiladas are all things that are comforting to me.
You sound like a great friend. So sorry for your friend's loss :(

Stuffed shells store really well. That recipe can easily be adapted to lasagne.

I made a rice pudding awhile back that I can see being good comfort food.

2 1/2 cups almond milk
1/3 cup rice
1/8 tsp salt
1/4 cup sugar
1 tsp vanilla extract
1 teaspoon cinnamon
1/4 raisins (optional)

Combine milk, rice, and salt over high heat and bring to a boil. Reduce heat and simmer for 25 mins, stirring frequently, until rice is tender. Remove from heat and add sugar, vanilla, and cinnamon. Return to heat and cook until pudding thickens (5-10 mins). Remove from heat and add raisins. Spoon into serving bowls, cover, and refrigerate 1-2 hours. This only makes 2 or 3 servings, so if you're eating with her you won't have to worry about keeping the leftovers cold.

I'm very sorry for her loss. If it'll help her, you can let her know I'm thinking of and praying for her.

I'm seconding lasagna. The Veganomicon has a great basic lasagna recipe. Stews always seem comforting to me, and they're infinitely reheatable. If you have a favorite casserole recipe, that might be something you could easily veganize and just shouts "comfort food."
