I highly recommend Veganomicon's Spicy Tempeh Sushi Rolls. They are super tasty but if you are only making it for yourself I suggest halving the recipe unless you either plan on eating a lot of sushi or putting the leftovers on crackers. She also suggests putting mashed sweet potatoes with maple syrup in them and that was delicious. I actually liked that more than the spicy tempeh. When my friends and I make sushi, we like to cram a lot of different veggies into one roll. Also I highly recommend using short grain brown rice instead of white rice.
Vegetebles we like to use: DEFINITELY avocado, cut intro thin strips. (Everything in thin strips). Red bell pepper, asparagus, carrot shavings, cucumber, sprouts, marinated and sauteed portobello mushroom, yummy tempeh...
I love vegan sushi, although I've only eaten it in restaurants. I like the maki rolls that have lots of different ingredients in: things like spinach, carrot, avocado, peppers, cucumber, mushroom. My favourite sushi place in boston does maki rolls containing fried sweet potato, which I doubt is particularly authentic, but it's good. Shitake mushrooms have to be my favourite thing ever, so anything with those is a favourite.
