I haven't used it but I just got that book! Any recommendations? I am also dealing with a very close budget myself.
I just became vegan again like yesterday lol, so I'm looking forward to trying all these new recipes! I am just concerned about which recipes to try first because I don't want to overspend. In addition I just moved into a new place so my shelves literally have 1 box of cereal, 1 carton of coconut milk, franks red hot, sriracha, quinoa, and finally salt and pepper.
The potato-spinach curry (pg.232) Seriously, this has been a weekly staple for the past month and a half. I've fiddled with the spices some a few times, but the original recipe is awesome as it is. Plus, it's potatoes and frozen spinach. Pretty cheap. Oh, and it's awesome over rice.
The cajun beanballs & spaghetti (pg.190) The beanballs are a little dry, but that's easy to fix. And I used the spicy marinara variation of the marinara, made in the slowcooker, and it was goooood.
Stuff I wasn't crazy about:The veggie pot-pie stew (pg.251) I doubled this from the outset, intending for it to be dinner for the entire week. Maybe that's to blame for the issues I had with it, maybe not. This was really impressive that it mimicked all the cheap, delicious frozen pot-pies I've had growing up, except for the HUGE amount of sage and thyme it calls for. No joke, all I can taste is sage & thyme. I have one whole recipe's worth sitting in my fridge that I just can't bring myself to eat. Anything I add

Awesome, I love curries so yeah I will definitely try that right away. Payday is tomorrow! So I will pay some bills and buy some foods and cook lovely delicious dinner. I haven't any rice in stock but I do have that quinoa so I'm sure that will be lovely.
I have a slow cooker in my storage, I'll make a stop by for that this weekend and make some sauce up! I do know how to make sauce. I made a bit of sauce a few weeks back, it's almost gone so it's time to make a new batch.
I made the eggplant bacon and I loved it. I baked it on a silpat which helps it to cook really evenly. I put it into "E.L.T.'s." My partner loved it, too.
Other things I love from that book are the Sanctuary Dressing and the Green Goddess Dressing, as well as the Pot Pie Stew and Sweet Potato Biscuits, though I refer to them as Yam Biscuits.
