The potato-spinach curry (pg.232) Seriously, this has been a weekly staple for the past month and a half. I've fiddled with the spices some a few times, but the original recipe is awesome as it is. Plus, it's potatoes and frozen spinach. Pretty cheap. Oh, and it's awesome over rice.
The cajun beanballs & spaghetti (pg.190) The beanballs are a little dry, but that's easy to fix. And I used the spicy marinara variation of the marinara, made in the slowcooker, and it was goooood.
Stuff I wasn't crazy about: The veggie pot-pie stew (pg.251) I doubled this from the outset, intending for it to be dinner for the entire week. Maybe that's to blame for the issues I had with it, maybe not. This was really impressive that it mimicked all the cheap, delicious frozen pot-pies I've had growing up, except for the HUGE amount of sage and thyme it calls for. No joke, all I can taste is sage & thyme. I have one whole recipe's worth sitting in my fridge that I just can't bring myself to eat. Anything I add to it masks the herbs, but also makes it taste like whatever I added. IMHO this one has potential, but you'll have to figure out the spice blend to use as you go.
The quinoa, white bean, & kale stew (pg.245) I just didn't dig this one. Too fennel-ey. Then again, I have a habit of disagreeing with most of Isa's seasoning choices and end up modifying/substituting in most of her recipes, so maybe I'm not typical.
If you're looking for cheap eats, I'd say definetly give the potato-spinach curry a shot. A 5-lb. bag of 'taters will make two and a half batches, and one batch makes a -lot- of curry.
Awesome, I love curries so yeah I will definitely try that right away. Payday is tomorrow! So I will pay some bills and buy some foods and cook lovely delicious dinner. I haven't any rice in stock but I do have that quinoa so I'm sure that will be lovely.
I have a slow cooker in my storage, I'll make a stop by for that this weekend and make some sauce up! I do know how to make sauce. I made a bit of sauce a few weeks back, it's almost gone so it's time to make a new batch.
it is! i had it with some quinoa and it packs so well for a lunch! So I have packed up some of that in 1 container, some yogurt in another and lastly i have a small container of tings.
Tonight, I heated it in the oven and also I heated some hickory smoked tofurkey deli slices and put it into a wrap with mustard... so freaking delicious!
I'm excited to see how many ways I can mix this up. Honestly, I'm thinking about making myself another wrap bc I made a small one to begin with but after a half hour I'm still more like some than just a bit hungry.
Perhaps I can pick up some mushrooms tomorrow and mix it with ketchup?
