I'm actually thinking of baking something for a bunch of omnis when I leave my current job to go back to school, so I've been thinking of this kind of thing too.
So far the banana split cupcakes from Vegan Cupcakes Take Over the World have been the biggest hit of anything I've ever made. I have never been all that impressed with the desserts from Veganomicon or VCIYCJ....but all of the cupcakes I've made from VCTOTW have been fabulous. They really go over well with omnis.

I really really love the chewy raspberry chocolate cookies from veganomicon and so did my family. I recommend them and am hopefully not too late to be relevant :D
I'm late to the party, but is it possible your oven wasn't the right temperature when you made stuff from VCIYCJ? I ask because before I got an oven thermometer NOTHING I made from that book turned out. Then I got an oven thermometer, found out my oven runs cool, and now everything I make turns out great. Because if I had to suggest a recipe for you, it'd be chocolate chip cookies from VCIYCJ. All of my (not just non-vegan, but ANTI-vegan) coworkers beg me for them at least once a month.

Cookies and cream cupcakes (http://www.washingtonpost.com/wp-dyn/content/article/2006/11/28/AR2006112800506_2.html) are amazing, but you only need about half the icing, believe me.

Another tried and true recipe I've brought to a party that was a hit was the chocolate chip cookies from Vegan With a Vengeance. (Recipe just needs extra soy milk to make into balls)
