Peanut butter cups are easy and delicious (http://vegweb.com/index.php?topic=6699.0) (try adding some peanut butter to the chocolate and some vanilla to the filling)

Cookies and cream cupcakes (http://www.washingtonpost.com/wp-dyn/content/article/2006/11/28/AR2006112800506_2.html) are amazing, but you only need about half the icing, believe me.

These chocolate and peanut butter cookies look amazing and are actually super simple and quick (http://macandcheesereview.blogspot.com/2008/06/vegan-peanut-butter-filled-chocolate.html). They are also highly addictive.

I'm actually thinking of baking something for a bunch of omnis when I leave my current job to go back to school, so I've been thinking of this kind of thing too.

So far the banana split cupcakes from Vegan Cupcakes Take Over the World have been the biggest hit of anything I've ever made. I've served them to many people who wouldn't have guessed they were vegan. They aren't totally easy, but SO worth it!

Another tried and true recipe I've brought to a party that was a hit was the chocolate chip cookies from Vegan With a Vengeance. (Recipe just needs extra soy milk to make into balls)

Another option is homemade peanut butter cups, which are just delectable, to say the least.Reply

I have never been all that impressed with the desserts from Veganomicon or VCIYCJ....but all of the cupcakes I've made from VCTOTW have been fabulous. They really go over well with omnis.

Also, try my vegan brownies. Trust me, they are excellen! =)

Iswari's Vegan Brownies!

1 cup Earth Balance, softened
2 cups dark brown sugar
1 cup white sugar
8 tsp Ener-G egg replacer + 12 Tbsp water (other egg substitutes may ruin texture)
2 tsp vanilla extract
2 tsp baking powder
1 tsp sea salt
1 cup cocoa powder (l like the dark kind, if you can find it, but regular does just fine)
2 and 1/2 cups flour
1 and 1/2 cup chopped dark chocolate (or semisweet chocolate chips)
Optional: chopped nutsCream together the Earth Balance and sugars ( ... )

I'm late to the party, but is it possible your oven wasn't the right temperature when you made stuff from VCIYCJ? I ask because before I got an oven thermometer NOTHING I made from that book turned out. Then I got an oven thermometer, found out my oven runs cool, and now everything I make turns out great. Because if I had to suggest a recipe for you, it'd be chocolate chip cookies from VCIYCJ. All of my (not just non-vegan, but ANTI-vegan) coworkers beg me for them at least once a month.
