Vegan Cookies Take Over Your Cookie Jar might give you ideas and may even help you figure out why your cookies haven't been working out. Whenever I flip through that book, I always want to make lots of deliciousness. Good luck!
Try most of the desserts from this site: http://blog.fatfreevegan.com/ I make almost all her recipes and even though not all of them are fat-free or super healthy most are, and they all come out delicious.
I don't actually! I think she had to change blogs a bit ago so maybe that's why it hasn't shown up? I just check it daily since I cook from her blog almost daily! heh
I use whole-wheat pastry flour(making sure it's pastry flour is key) and brown rice syrup as a sweetener whenever I make cookies. They taste the same to me, and I don't have problems with them not rising or being too heavy. Depending on the type of cookie, sometimes people can't even tell the difference. I'll post a few recipes when I get home, if you'd like.
Jae Steele's books have healthy cookie recipes in them... Get it Ripe and Ripe from Around Here.
That said, if you don't know how to bake it's a bad idea to start substituting things willy nilly. Different flours, sugars, etc. completely change things. Start with cookie recipes that already have the ingredients that you are fine using and then when you got those down you can start branching out.
That said, there are a lot of cookies that are never going to work as healthy: that's why they are cookies! Generally my philosophy is if you want a cookie, make a cookie, if you want something healthy eat a piece of fruit!
Everything on myvegancookbook.com that I've tried has been FANTASTIC. His lentil loaf, faux fish and lentil stroganoff make frequent appearances in my kitchen. Highly recommended!
Actually, I'm lying. For that first cookie recipe I did use the oil. It's such a small amount and is really for texture. Coconut oil would be super rockstar in them!

I've sub'd applesauce for the oil successfully in these guys or you could use the coconut oil.
