Inspired from Crescent Dragonwagon's Shocking Pasta. Super easy but takes a few hours. The picture doesn't even begin to express the bright, electric magenta color of the beet sauce.
I just made this, with farm share beets and basil from my friends' container garden. My god, is it delicious (and beautiful!). It's good enough to eat spread on bread, or just straight with a spoon. ;-) Thanks for the idea!
