Chard and parsnips

May 12, 2010 18:34

I have a bunch of rainbow chard, a couple onions, some garlic, and parsnips. Are there any recipes that involve all of these things? I love the combination of the former three, but I don't know how to involve the parsnips. I have a recipe for a separate parsnip dish, but if there's a way to put them all together tastily I'd like to try it!

You could make mashed parsnips (same way you'd make mashed potatoes), sautee the onions and garlic with the chopped chard and a little, and then stir that back into the mashed parsnips.

Also, come to think about it, you could take the above suggestions further by adding sauteed chard/onions/garlic to the mashed parsnips, forming them into patties, and frying or baking them with a little oil.

The hotpot I made a whilse back ( and posted a pic and recipe of) includes garlic, onion and parsnips. I reckon you could include the chard though, maybe if you sub the celery for the chard?

Here's the recipe

dunno bout parsnips, can you oven roast them with onions and herbs with a lil oil?
Sautee garlic/onions in oil, some soy sauce and herbs, them put in chopped up chard, let it steam and sautee, add vegetable broth to get the chard more steamy and tender. add soy sauce or tamari or braggs to taste.
