Cous-cous With Lemon

I've had a recipe for lemon couscous salad for a long time and today I decided to make it. It is basically vegetable broth, lemon juice, lemon zest, salt and pepper. In my opinion this is just the start of something. It's pretty bland all by itself but I think it has amazing possibilities. The lemon taste is not overwhelming so I think it would

Add in chopped roasted peppers, red or spring onion, lots of mint and coriander.
