Vidalia Onion Pie

I want to veganize a family recipe for vidalia onion pie that i remember being heavenly. I can obviously use soy milk and daiya cheddar for subs, but i don't know how to replace the egg. Any suggestions? I don't think Ener-g would work well.

I think puréed silken tofu would work, perhaps with a tablespoon or so of water if it's too thick.

+1 on this, we have been using 1/4 cup per egg. we puree silken tofu with unsweetened soy milk :)

I would suggest adding some cornstarch or something to the pureed tofu

yep; this is what i would do..or you could even make a roux as the base for the egg+milk mixture for thick richness
