Indulgent foods + Best Soups

So hi, some of you might remember I made a post in January because I had back problems and couldn't cook my own food. Well, another month of agony, 3 hours of emergency surgery and some majorly shitty hospital food later (I was given tuna salad as the 'vegan' option on THREE seperate occasions), I've had a disk removed and the back problems have ( Read more... )

A soup that I really like to make is Root Soup:
2 carrots, diced
2 parsnips, diced
1 carton of broth

Put all ingredients into a pot and cook until the veggies are tender. Remove from heat and blend all ingredients. Salt and pepper to taste.
It doesn't make a lot but I'm sure you can double it.

I also LOVE cabbage soup and borscht. If you need recipes, let me know.

i eat loads of soups too. i often just make it up, but some of my favourite recipes include the beet/coconut cream soup on this community (look under beets), the white bean and garlic soup from vegan with a vengeance, and any squash soup combined with thai flavours like ginger and coconut milk. there are lots of great soup recipes here too, including a squash bisque using cashews, which i adore. http://veganyumyum.com/... )

another one i thought of when i was in wholefoods this weekend (the home of over-priced but desirable vegan foods!) is medjool dates. eat them as they are, chop them up and put them in cereal, one ice cream, anywhere!

It may sound a little blah, but this always hits the spot with me. Angel hair spaghetti with either lots of melted Earth Balance or a gooood marinara. Top with toasted walnuts, chunks of Apple Sage flavored Field Roast sausages (if you're using the margarine, heat of the sausage up in the margarine), and Raw Parma. Or instead of sauce, use peanut butter chili. The peanut butter in it is mandatory.
