Breakfast Casserole Help

I work in a very carnivore/omni office, though there are those who are considerate of my being vegan, and each department hosts breakfast every two weeks (rotating through about eight departments so you don't have to host super frequently). I think the "Mom's Morning Casserole" in Vegan Brunch could kick a lot of ass. It's basically a layer of paprika potatoes, a layer of tofu scramble, a layer of tempeh sausage crumbles, and a layer of "cheese." I would go with a nooch cheese sauce on top, instead of grated store bought cheese, because that can go so very wrong. While you might say that plays heavily on the vegan-ness, if you made a very high veggie-content-scramble I think it would work really really well, because if you didn't point out that it was vegan I don't think they would care, or notice. If you don't have access to the recipe let me know and I will post it.

That sounds good, and I agree about the cheese. I requested a copy from my library system, but it didn't show any holdings. Normally, if there are no holdings it wouldn't let me request it. I was number two in line, too, so I am confused, lol. If it doesn't show up next week, I may ask you about the recipe, thanks!
