Breakfast Casserole Help

I work in a very carnivore/omni office, though there are those who are considerate of my being vegan, and each department hosts breakfast every two weeks (rotating through about eight departments so you don't have to host super frequently). Rarely is there anything I will eat other than fresh fruit. Yay ( Read more... )

The casserole I usually make is near enough a full english- mushroom, tomato, potato and sausage (could do bacon do is you know a nice vegan version) done in stock with a tine of beans chucked in at the end (with a bit of the bean sauce drained off). I like it but plenty have not

There is a casserole recipe in vegan Brunch, but I have never tried it. There are a few other recipes in Vegan Brunch that seem like they might be "casserole like" in nature.

maybe a french toast casserole. my sister makes one that is non vegan. but you could easily substitute the egg/milk mixture with soy creamer. I would layer thick sliced bread with a little vegan cream cheese(adding some maple syrup or agave nectar to the cream cheese to sweeten it). then add cinnamon and a pinch of nutmeg to the creamer and pour over the whole dish until everything is moist. then bake it. I would also add extra cinnamon and some powerdered sugar to the top to finish it off after it has baked. I guess you could also drizzle some maple syrup at the end or in between the layers. sorry this recipe is not more detailed but I tend to find non-vegan recipes and just substitute vegan ingredients.

my only suggestion is do not use fake meats! my husband (is an omni) and he always loves things i make unless fake meats are added-he (and i agree) thinks they taste, well; really fake.
you could base the casserole on hashbrowns and veggies ;)

i know i'm late to the party, but i think it's funny your omni husband dislikes faux meat because my omni husband LOVES them. i actually try to cut down on how much we use them because they're so expensive and so processed. he doesn't mind when i use tofu, or even TVP, but he really prefers (and LOVES) stuff like GimmeLean. the only faux meat he refuses to accept is bacon because it's so drastically different from the original.

I'm just making this up as I go, but if you're in the right part of the world to get fresh tortillas, a 'breakfast taco' casserole might go over well and be different enough to stand out for originality rather than for vegan-ness. I'd do layers of tortillas with refried beans, fried potatoes (could use frozen hash browns for ease), salsa, and scrambled tofu in between and on top. Add a bowl of guacamole on the side for a topping. The scrambled tofu could be a weak link, but other than that, I think it would have omni appeal.
