Yeah, I was all "blueberries?" when I read the orange buttercream frosting recipe.

I might be able to make these (with some ingredients yoinked from my parents) if I use water instead of soymilk, and sprinkle with sugar instead of making frosting. I wonder how they'd turn out.

you could water down apple sauce instead of subbing water if they have that- the water might not work so well. been there, done that, complete disaster!

apple sauce is a great sub in baking. especially when you are broke and have that around- we always do because my birds and kids love it, and we use it instead of milk in a lot of things. or fats or oils. and it gives things like cupcakes and sweet breads/cakes a nice springy texture.

I'm planning on making the orange chocolate cupcakes tomorrow. I can never get the buttercream to work for me, but the cream cheese frosting is delicious.

It always looks all separated, it's because I don't end up letting everything warm up to room temp I think. So I always just default to the cream cheese frosting.

It looks delicious! I do have a question: when you mention "shortening" in the frosting recipe, do you mean stuff like Crisco? I guess I mean to ask: do they make trans-fat-free shortening? I'd love to try it but I avoid trans fats like the plague. Thanks :)

We used Crisco and it is trans-fat free. Crisco does have palm oil, so if you are avoiding that for ethical reasons, you'd have to find an alternative.

crisco is made by proctor and gamble-think twice before buying their products unless cost is a serious issue.
