I'll usually make something large at the beginning of the week - breakfast quinoa usually and either indian food (spicy lentil stew and spinach with chickpeas usually, over brown rice), stew in the slow-cooker, large pot of soup, etc. for take-along lunches and for dinner usually pasta (you could use rice pasta?) with tomato sauce and tvp, and some fried veggies (broccoli, asparagus, carrots - frozen) with salt, lemon pepper, red pepper flakes, and garlic powder. Occasionally for dinner I'll have mashed potatoes, veggies, and a can of heinz deep browned beans (usually when my mom makes enough at dinner for me and I just need to supplement my protein. it still wouldn't be terribly hard to pull of though.)
Something else I liked doing was stir frying veggies (broccoli, carrot, garlic, onion, sometimes kale/bok choy and sun-dried tomatoes as well) with seasoning salt, lemon pepper, and hot pepper flakes. Making mashed potatoes and mixing it all together. A bit more work but still not loads and good vegetable count.
I'm only asking because I've cooked for people who told me they were wheat free, yet when it came time to eat they got mad because really they're gluten free, but thought saying wheat free was good enough.
Quinoa is your friend! I'm also pretty crazy about millet. Both you can cook up in the same way as rice - make a big pot of plain quinoa or millet at the beginning of the week, and season as needed throughout (+ brown sugar & maple syrup for breakfast, + sauteed veggies etc for dinner
