I rinse a can of chickpeas and toss it into a large pan with some broth. Then I toss in all of the vegetables/tofu/leftovers in my fridge in, add some garlic, some seasonings and then just let it simmer until all the broth is soaked up.
It's seriously delicious and it lasts forever and it's GREAT for cleaning out your fridge.
It may seem complicated, but it really isn't. it's all about 2 - 2 containers of veggie broth 2 8oz cans of diced tomatoes 2 bags of frozen veggies (your choice - I've been loving TJ's Harvest Hodgepodge lately) 2 cans of beans (great northern & kidney) 2 TSP of minced garlic seasoning
throw it in a pot for 20-30 mins DONE!
This makes a lot of soup too, so you can cut it in half if you want... makes it even easier!
If you don't have a crock pot, I'd recommend getting one. The ease of just grabbing a bunch of veggies out of the freezer or can, a little stock and a protein of your choosing (canned beans, for example), tossing it in, turning it on, and walking away just can't be beat. If you can find 5 minutes in the morning, it'll be dinner. You can season it to your taste preferences.
Soup in a crock is the ultimate in ease and time saving.
Brush a baguette with some garlic and olive oil and toast. Mash the flesh of an avacado with a chopped chilli, lime juice and salt and pepper and spread on the toasted baguette. If you're sick this is full of good fats for fuel.
Three Minute Noodles
Use one packet of instant Japanese Soba noodles with sauce and add and or all of the following: Some ginger paste, squeeze of lemon or lime, some sweet chilli sauce, some coriander leaves.
