How to veganize a savory cheddar bread pudding?

Thanksgiving is being held at my aunt's this year, and when my dad mistaken told her I was just a vegetarian, she cocked her head and said "That's okay - vegetarians can eat turkey! thanksgiving is always a good time to bring people over to the dark side. *bwhahahahahaha*

you know what? that's pretty much a mac-n-cheese recipe. if you take a mac-n-cheese that you like, make it more liquid (to compensate for the bread), and add the distinguishing ingredients, that should work out okay.

no matter how you decide to change it, i highly suggest trying it out ahead of time before bringing it to the family gathering.

my instinct is to tell you this is too dairy-laden to be veganized (successfully), and that if one of your goals is to encourage the omnivores to enjoy it, you might want to stay away from vegan "cheese." I've found its easier to win converts with dishes that are "naturally" vegan, if you get my drift, a squash stew or a bean dish? something that isn't trying to be a dairy or meat dish...

that being said, there are egg and cheese subs on the market, you could try subbing directly. maybe a test run before the holiday?

They refuse to try the food anyway, so I was just going to bring a serving each for my husband and I - I just get sick of them telling me how 'it looks gross.' If it looks delicious then they'll say it, but they'll still refuse to try it. That's my family - silly.

I've been thinking about possibly doing a stuffed butternut squash done with apples, forbidden rice, sage, red-skin baby potatoes and toasted pecans. I just keep thinking of cheese for Thanksgiving, is the problem!

i find it interesting that omnivores think plant food is gross but will gladly suck down milk with pus in it.

Also, christ, the protein thing is irritating. Where do i get my protein? Well, where do you think the animal gets it? -_-

I'd go with the stuffed squash if I were you!

I'm not sure where the cheese association is coming from. I'm thinking of what my family normally eats on Thanksgiving, and it's pretty much cheese-free: turkey, stuffing, mashed potatoes and gravy, green beans, corn, sweet potatoes, rolls, and pumpkin pie.

Sorry about that. I had 3 tags, too, but I seem to have a problem having them ever show up. I copy and paste each tag, type a space in between each tag, and it'll usually either never show or it'll only show the first tag I've attached. Do you know what I'm doing wrong?

usually it's just easier to post the recipe without tags and then go back and add them later. (that's the little button up top to the right of the edit entry button)

anyway, if typing them out while creating the new post, tags need to have a comma between them. if there's a space, LJ thinks it's a brand new tag, and only mods/maintainers can create new tags. (for consistency)

i didn't ask for an LJ cut, but here is the FAQ. (i usually just have a list of the HTML on a hidden floating entry on my journal so i can copy and paste instead of having to remember the whole code.)

alternately, if you post by richtext, you have to highlight the section you want cut and then press the LJ cut button.

A friend made somthing similar to this, but just buttered the bread and used a white sauce along with the cheeze so it wasnt too dry. was delicious.

I would look at other savory bread pudding recipes for ideas on how to get flavor while avoiding cheese. That's a lot of eggs to try and replace though.
