Stuffed Cabbage Rolls

Vegan and easily gluten-free! Someone posted the original recipe to another community I'm in--the "traditional" version has two pounds of meat in it, ew! I was thinking of using tempeh for stuffing instead, when a friend said she'd used potatoes and mushrooms before. I was intrigued and decided to try it myself, and the result was delicious! In Russia, it's called "голубцы" (golubtsi). I make mine with about 1/3 rice, 1/3 carrots, and 1/3 onion for the stuffing.

Oh. My. God. This is a version of my Nana's Pigs In A Blanket that I can eat! YES! I miss those things so much haha. Thank you for posting this!!!

What's really hilarious, is my boyfriend (whose mom has Polish ancestry) came over and said, "Oh! Pigs in a blanket!" I grew up thinking pigs in a blanket, was hot dogs in biscuit dough, so I was really confused!

In any case: this is the first boyfriend I've cooked for who said my food resembled his mom's. I'm not sure if that's a good thing or not. *lol* He liked it, so I guess it's okay, I'm just not used to reminding men of their mothers...

Cooking-wise, that can be the world's best compliment. An ex of mine swears by his mother's cooking (I've had it, I agree!) and whenever anything I made was good enough to earn a comparison to mum's cooking, I knew I'd done a good job :-)

Recipe wise, I'm clicking and saving this for future dinners! I usually just replace the meat with Yves Ground Round, but I've never tried potatoes before. And since my roomie is allergic to soy, this should work for the both of us. THANKS!

I dunno how much my boyfriend liked his mom's cooking--it hasn't come up in conversation, as he doesn't talk about his parents all that much, they're across the country from us and he hasn't seen them in years.

Yeah, potatoes and mushrooms are definitely cheaper as well, especially if you get a good price on the mushrooms!

Thank you for posting! My CSA gave me a GINORMOUS cabbage this week. I made half into a massive vat of coleslaw, looks like now I have a plan for the rest!
