Bake a single giant cookie. Top it with soy ice cream, vegan hot fudge, your non-dairy whipped topping of choice, chopped nuts, etc. Turn it into a huge sundae. Consume with knife, fork, and spoon.
Bake it into a pie crust and fill it with a filling that can gel in the fridge rather than needing to be baked, like key lime pie. EDIT: Actually, this key lime pie recipe looks even better.
Not a massively exciting idea, but could you put some orange food dye in the cookie dough and use it as a Halloween treat to give away? Chocolate chip scary faces on top, etc?
Otherwise I would say send it all to me but alas I probably live in a different country. :(
Freeze it! In a month or so you will be so delighted to remember that you are 10 minutes away from fresh chocolate chip cookies, whether for yourself or to share at work or school.
My first thought for extra cookie dough would be to whip up a batch of muffins, and either stir chunks of cookie dough in, or as you fill the cups with muffin batter, put a spoonfull of cookie dough in, and cover it with more muffin batter. I have no idea if this would work... but I think it's worth a try.
the current gf favs around my house are: popcorn clusters (family goes bonkers over these) gf cookies slimmer cupcakes (i made these today. total hit with the entire fam and aptly named cause they sort of resembled slimmer from ghost busters) mini cheesecakes with spider web tops any cupcakes with spiderweb tops/ bug tops/go eat worms cupcakes...
and gf cupcake can make something easy. you could use white frosting to make ghosts (oh! filled with rice mellow!), orange to make pumpkins (pumpkin flavor!!!), make candy corn looking ones... i could probably go on for days.i love halloween and i love baking so when they combine it makes for a happy holiday.
