Cookies and Halloween (GF?) goodies

I've got a LOAD of chocolate chip cookie dough left from a triple batch I made and frankly, I'm sick of plain cookies right now. Any idea what I could do with the rest ( Read more... )

freeze the cookie dough!!

sesame candy is a good treat, but usually pretty sweet so maybe not for your diabetic friend. here is what i would recommend: get a few nuts & nut butters of your choice (sunflower seeds, pumpkin seeds, almond butter/pumpkin seed butter/sunbutter/etc), coconut oil, cocoa powder, agave, shredded coconut, etc. grind the nuts up in your coffee grinder, then add the other ingredients to proportion until you can form them into balls. they are gluten-free and since the amount of sugar you add is up to you, they're good for anyone avoiding sugar.

roll the chilled dough into balls a little larger than the size of a marble, insert toothpicks into each ball like a lollipop, freeze on cookie sheet. when they are solid, roll into toppings like caramel and nuts, cocoa powder, coconut, some type of jam and ground peanuts, then freeze again. take out about 5 minutes prior to serving :] great as party snacks or as a little treat for yourself when you feel like having one!
