Duplicating Panera's Black Bean Soup

I am in love with Panera's black bean soup. But it's way too expensive to eat there very often. I'm no good at duplicating recipes so I thought you all might be able to help me. Especially those of you who may have eaten it before ( Read more... )

oh sweet, thank you for the link. I've been craving this and the closest Panera is too far away. Now if only I could easily recreate breadbowls!

Bread bowls are just small round loaves, usually a denser bread like sourdough. Top sliced off and inside cut/picked out. I use breadbowls a lot for spinach dip.

I have found that putting about half the soup in a blender or food processor once it's done really helps with the thicker texture. I'd also use vegetable broth rather than water, which will give it a nicer flavor.

I like to use an immersion blender for that, best kitchen gadget I've ever received. They are so handy for thickening soups.

Oooh, yeah, I want one of those, but I'm coming dangerously close to having too many kitchen gadgets. :-/ My only solution is to move into a house with a huge chef's kitchen I guess... haha.

If you want a good recipe for your own breadbowls, I made some the other night!
Preheat oven to 400F.
Take a small/medium round casserole/baking dish and turn it upside down on a baking sheet.
Take a whole wheat wrap and put it over the baking dish. Brush the outside lightly with olive oil and put in the oven for 8-10 minutes. If you like it crispier, leave it for 10 mins, if you like it a little less brown, leave it for 8.

I suppose it isn't quite the same as using actual bread for the bowls, but these are still pretty yummy!

Instead of modified corn starch you can substitute Xantham Gum powder - a little goes a long way. Just say No to GMO! Enjoy the soup :D

Just to throw my 2-cents in, I work (although soon to not work there- thank god) at Panera and when I'm bored I play around with the food items. Turns out the black bean soup makes a really great base for a chili. So if you're not in love with the FFVK recipe, look for a chili recipe and maybe go with cooking the beans in a similar fashion?
