anyone have any idea where I could find a white cheese substitute in bulk ( Read more... )

I use tofu in place of ricotta cheese- there are quite a few recipes around
I usually mix 1 lb tofu with 1/4 cup tahini and 2 tbs miso

i second the tofu. i don't use tahini or miso though, but rather a little bit of lemon juice, garlic and spices.

but soy too is a potential allergen... so i dunno.

When making lasagne, I mix tofu with lemon juice, garlic and parsley. It turns out quite well! In lieu of grated cheese to topped baked things, use either soy parmesan, breadcrumbs (remember to read labels if you're not making these in the food processor), or nutritional yeast.

It is damn tasty, and very rich and creamy.

The vegan cream cheese may just as difficult to find in bulk, though.
