There's also lemon and spinach soup with orzo (just leave out the egg) or this lemony grain salad with asparagus and almonds (just omit cheese). Both are tasty and will use up some of your lemons!

I also made this lemon cake with lemon cream and lemon icing for my friend's birthday party. I'll have a look for the recipe I used. It was really really nice.
OH! and lemon pie! There's a recipe in Now Vegan by Lynda Stoner. If you want I can type it up for you.
Of course you can use little bits of the juice for hummus, tabouli, tagines, scrambled tofus etc.
I love the lemony chickpea dish in this post, and there's also a lemony tofu dish.
You can also juice the lemons and put it in ice-cube trays and freeze to use in small bits at a later date.
