Wedding menu

My partner and I are getting wed in October, it's so much fun at the moment getting into the wedding planning but we could do with a little bit of advice on the food! We're both vegan so it's an easy decision that the food will be too, but we still want to try and make it as accessible as possible for everyone else ( Read more... )

There's a Mexican place near where I live, and they make these killer flour tortilla chips. It's not all that weird, but it's a nifty alternative to the corn tortilla chips everyone is used to.

Sorry I can't be of much help, but I know *I* would be totally content going to a wedding with that menu =D

Corn bread would be delicious, might add that in anyway, but I've just realised that I think we need something else non-carbohydratey to keep the balance of the menu!

Maybe "Mexican lasagne"- basically enchilada fillings and sauce, but built layered with the tortillas like lasagne rather than rolled up? My favorite filling for this is little cubes of roasted sweet potatoes, black beans and a smoky mole-type enchilada sauce.

I was going to suggest enchiladas, and concur that black beans + sweet potatoes or butternut squash is an excellent choice.

Another good one is taquitos -- they're tortillas rolled around filling, and then either baked or fried until the tortillas get crispy!

Taquitos sound amazing, I've never had them before, but they sound a little like chimichangas and I love them so much! So, smaller versions of them would be amazing, and would look really cool all piled up on a buffet table. Might try making some myself this week and see what happens!

I would love to go to a wedding with this menu. Yum!

There's a Mexican restuarant near where I work that makes amazing taco salads with beans and rice and cooked spinach. Surprisingly, it works well together. Perhaps some sort of taco salad "buffet" where people can chose the beans/rice/spinach/anything else? and then garnish with toppings?

I think this is a great idea. I like that the diners can personalize their own dish and leave out things they don't like. I think you could also put in some stuff that not everyone would want to try, like tofu and vegan cheese.

At my friend's vegetarian wedding, they had a design-your-own-pasta bar where people piled their chosen assortment of veggies and cheeses and a chef tossed them in a pan to cook in front of you. One of the options was vegan sausage, and it was way popular.
