Minestrone

I had half a head of cabbage to use up a while ago and I just wasn't feeling for stir fry. I found this minestrone soup recipe on the net and was delighted with how delicious it turned out, so I thought I'd share. It's easy, fast, and keeps the veggies nice and crunchy. thanks! i had some cabbage in the fridge on its last legs and i had no idea what to do with it. perfect! this is on the stove right now. i didn't have any garlic but i ended up adding some shallots and some more spice for an extra kick. i keep tasting it and so far it is amazing. and so easy!
