hummus

help! i've checked the tags...
we've got a mammoth tub of hummus that expires today and we're not sure how to use it up besides eating lots of sandwiches/chips. etc.

i was thinking of a baked ravioli of sorts with hummus and maybe roots? suggestions?

remember, just because it says an expiration date doesnt mean it needs to be thrown out on that date
