Personally I use the Joy of Vegan Baking's lemon bar recipe. I have made it for non-vegan parties and nobody could ever tell they were vegan and they were really lemony. You also don't have to use agar which kinda weirds me out a bit. I only make one substitution to this recipe and that is replacing the vegan butter with vegetable shortening.
The more I'm hearing about that book, the more I'm considering picking it up. I was never into baking as an omni so I'm still having trouble rationalizing buying an entire baking cookbook. But it seems like I'm finally developing my sweet tooth.
Oh, I don't own it because I don't do much baking either. I just go to Google books and get the recipe from there. I should just write it down since I have been using it a lot lately for parties. :-)
I'm surprised - I made the lemon bars from V'con and they were an absolute dream to me! Just like the lemon bars by my mom, except no nasty animal parts. :)

so like blueheron says. 1 tbsp is equal to 3 tsps of the same thing, so divide the 3 tsps by 3, and there you go. 1 tsp of powder per tbsp of flakes.
