leeks

So tonight I am making potatoe leek soup but I will have an extra leek. What should I do with it?

I would just put it in the soup. I always end up with more than I should, but they're pretty mild, so it won't hurt.

I would definitely put in the soup. However, I love leeks and always add more to my potato leek soup than is called for in most recipes. If you decide not to add it to the soup, you can use it in any cooked recipe that calls for onions or green onions. I wouldn't use it in a recipe that calls for raw onions, though.

I always double my leeks in soups. They kind of melt into it, so I like extra. :D

Put it in your mouth and take a picture!!

Otherwise I think it might taste good in a stir fry or maybe baked or roasted with some eggplant. Yum!
