cabbage as a bread substitute?

I have an intense need for easy food to bring with me to work for breakfast. Due to the work I do, I have to "sneak" the fact that I'm eating there at all (it's something that we all do and it doesn't endanger anything, but it's a pain ( Read more... )

Does cabbage fall apart when cooked? I've never had it except shredded so I don't know of its properties...

yeah. me too. We can eat in the breakroom on our scheduled lunch breaks, but I work around computers so they don't want stuff all over them (which I understand, but most of us are adult enough to not slop things all over or eat tacos/pasta/ice cream or anything that generally gets on things. and I've heard of napkins, unlike a lot of the people I work with)
It's understandable, but annoying for those of us that eat more than 3 meals a day or those of us that work at 5 am and NEED food! lol

When fully cooked, cabbage is pretty much as together as raw lettuce. I would agree with the notion to blanche.

It seems like it should work. I bought a collard green wrap (meaning a bunch of vegetables wrapped in collard greens) for lunch at the Farmer's Market today, and it worked well, so cabbage could probably also work.

Doesn't it though? I mean, I guess my thought process is that if it works, why is it not in a billion blogs/cookbooks/etc for vegans/gluten intolerant/low carb peoples??

I know I like to use napa cabbage as a substitute for flour tortilla wraps. I say go for it.
