I've made bisquick pancakes at home with just the water and the mix (no applesauce) and they came out fine (good for the OP to know, as it would be one less ingredient to mess with). Although the applesauce sounds tasty, so now I might have to try that! ;)
I do bisquick pancakes all the time. My basic recipe is about 2 cups bisquick, 1.25 cups soymilk (or water), a tsp or two of baking powder, a tablespoon or two of lemon juice (activates the BP), a few tsps of sugar, some cinnamon, and a little vanilla. Turns out delicious.
Wish I had a recipe for you.... I'm not sure if this will be useful but I regularly go to the Vegan Pancake Breakfast here in Madison. Maybe if you contact them they will share their recipes... all I know is they are delicious.

The recipe is on the box. I use (reduced fat) bisquick, water, and unsweetened applesauce. The applesauce is an egg replacer, as far as I remember.

You might also consider waffles, which might be easier to make ahead and keep warm
