Pumpkin mousse + a week full of recipes

The other night, I was craving something sweet and my first thought was to make snickerdoodles. But not having any sugar, I realised it wouldn't be possible. I have been going through a huge pumpkin thing recently. But it never occurred to try making mousse! Mmmm, sounds tasty.

I had seen a recipe in one of my cookbooks, which is where I got the idea, but I made up the recipe on the fly. It was quite tasty!

You're welcome! It was so simple, I couldn't believe it. The ginger really highlights everything and the maple syrup works wonderfully with the pumpkin and the spices.

I'm totally making it for next Thanksgiving. The cookbook included a recipe for a spiced whipped tofu cream, which I think would be perfect for it. But the mousse itself is delicious on its own.

do you usually go shopping once a week for all of your food? i'm trying to get myself into a weekly meal planning thing. lately i've just been buying the ingredients for 2 dinner-type recipes and 1 dessert a week. the dinner-type ones turn into hella leftovers so i just nom on them during the week along with going out or eating something else in my kitchen. this week i'm doing the sushi rolls from VCON and the bbq baked tofu w/ mashed potatoes from VCON (i'm positive the names aren't right but my cookbooks are all the way in the other room!) also the chocolate chip cookies from VWAV. anyway i'm just curious about how you come up with what and how much to make during the week.

oooh and that all sounds good. i think i should start making muffins and banana bread type things for breakfast...

I find I waste less when I plan meals for a week or so. This will make plenty of leftovers, but since I like variety, it's better to plan for it, then deciding to run out for take out or something processed. I can only eat so much from one particular item before I decide I just can't eat it anymore.

I probably wouldn't have considered making the veggie pâté, except I have the mushrooms and jalapenos and didn't want to waste them. If all else fails, I can freeze it.

I don't really have a plan at how much to make. I just peruse my cookbooks until I find things I like. There are only 2 main dishes there and a bunch of sides, so that should last me probably into early next week.

I imagine that it'll be a bit of trial and error until I work out how much is enough for myself and my daughter. My goal is to cook 95% of everything we eat.

Oh, wow. SO making that pumpkin mousse soon! That sounds delicious!

And now, off to check out the Real Food Daily Cookbook! That tofu quiche with leeks and asparagus is calling my name!
