Mac and Cheesy

So it's been extra cold and winter-like here, and I was craving mac and cheese! Mmm!

I threw this together and it was wooooooonderful :) Just thought I'd share. I'd love to make some vegan/veggie friends on this journal too, if anyone's interested :)

Dude, this works. Truuuuust me! I used to make this same recipe with reg milk and cheese years ago ... it's almost exactly the same. :D

what kind of soy cheese did you use?

I got a bag of already grated cheddar, I *think* the brand was Follow Your Heart. Really, anything would work. I want to make it again, and use maybe a spicy jack style or something! This kinda thing is fun to experiment with, cause really... you can't mess it up, anything tastes great! :D

Did the FYH melt into the sauce well?

Indeed it did! I was careful to not like, let it get toooo hot, cause it could burn on the bottom, but LOTS of stirring over the heat, and it was great! Plus, when you pop it in the oven it gets more melty, and gooey and wonderful :D
