mini tofu quiches

I've been having way too much fun baking. I hope you guys enjoy these as much as I did.

3 t minced garlic
1 cup bell pepper
2 med plum tomatoes
1 cups chopped mushrooms
1/2 cup chopped red onion

1 carton extra-firm silken Mori-Nu tofu (drained)
1/4 cup plain soymilk
1 1/2 T arrowroot powder
3 T nutritional yeast

Question for ya: is there another ingredient I can sub for the arrowroot powder that performs the same function in the recipe?

Thanks. I've never used arrow root before, so I wasn't sure what part it played in the overall recipe.

It plays a similar function to cornstarch, it helps things thicken and set, however it doesn't impart that startchy flavour that cornstarch does. I highly recommend picking up some arrowroot, the stuff is darn useful. I've subbed cornstarch before, and in some recipes, it worked perfectly, and in one, it lent a rather unpleasant flavor to the food. I think it just depends on the ratio of starch to the rest of the ingredients, but you won't know for sure until you try! I've been fairly lucky, the cornstarch sub only really failed for me one time.
