roast the bulb with some veggies in oil :O) it's really tasty... chop up some of the fennel top to mix in with the veggies & oil.

I think at some point that everything has probably been roasted with veggies in oil.

Fennell is really great with orange. Finely slice it and add to a bowl with peeled and sliced oranges and walnuts or subsitute the walnuts for olives. Toss all with a little olive oil - very yummy and meat eaters will love it as an accompaniment to BBQ meat and especially fish ( ... )

Roast it in the oven with oil and top with lots of fried bread crumbs. Mmmm!

i just had roasted red potatoes with fennel for lunch. DELICIOUS.
