I can't remember the last time I had a potato pancake without apple sauce within sight. It's more or less tradition.

I was already going to serve apple sauce. Do vegetables go with potato pancakes? Is there a bean-centered side dish I could serve?

potato pancakes are sort of a side dish? since it's just a carbohydrate i mean. i have always had them with apple sauce and sour cream. mmmmmmmmm
