Israeli Couscous with Dried Apricots and Olives

I made this for a potluck last night. It was super easy. I combined a couple of recipes I had and the result was delicious - a nice combo of sweet and savory. I think toasted almonds would be really good in place of the pine nuts, too, if you prefer. enjoy ( Read more... )

It does sound really good! I was just looking up North African couscous recipes and this looks pretty similar. I have been craving a new couscous dish!

yes, i think most of the recipe i got from something with the other kind of couscous, and i substituted the olives. i just like the israeli kind cause of the texture. it's so much fun to eat.
