I'm having a big party over the easter long weekend, and our house tradition is a hangover-day bbq the next day, and i'm trying to find some new recipes. I'd love to try grilled vegetable kebabs (like pieces of vegetables on skewers) or maybe something with tofu that omni's would eat too ( Read more... )

Omnis seem to appreciate grilled portabello mushrooms a lot. Grilled corn on the cob is also good. You can pretty much grill any vegetable if you cover part of the grill with tinfoil and poke a few holes through.

i second grilled portabellos and corn (i grill corn in the husk - remove the outer-most layers and let the ears soak for 15-30 minutes and then the corn steams itself inside the husk).

i'd also highly recommend grilled asparagus and grilled beets. for asparagus, snap off the tough ends and halve, then drizzle with oil and put in a grill basket. for beets, peel and halve or chop. microwave a bit to soften, drizzle in oil, and then cook. the half beets take longer and cook better over a lower temp, but they are all delicious!

when i grill tofu, i marinate it for a while and then stick on the grill or in a grill pan - it comes out great! careful that it doesn't stick!

This is exactly how I grill them. (Which is funny, because I've never seen this article before, but I *am* an engineer!) I love grilled artichokes like nobody's business. When they are in season, I'll have them three or four times a week without getting tired of them. Oh, wait, looking again - I realize that I do one thing that they don't recommend, which is that I add some fresh lemon juice with the olive oil and ground black pepper (and I don't use salt, I get plenty of that elsewhere in my diet).

Honestly, this is the way to go. I don't even think they need any kind of dip when they've been steamed and grilled with the olive oil, lemon juice, and black pepper.

I grill my artichokes wrapped in tinfoil on the grill. It works great, a sort of steaming and grilling double whammy. I add balsamic and garlic and olive oil, too.

Works great to slice up potatoes or veggies, place in foil with olive oil, salt, pepper and whatever other spices/seasonings.

gardenburger makes vegan riblets =) there is a bbq recipe in VWaV as well..while i haven't tried it, it's by isa, so it's gotta be good!
