grilled tofu + eggplant 1 1/3 c olive oil 1/3 c red wine vinegar 6 tbsp chopped mint 1 tbsp cumin 1/2 tsp salt 1/4 tsp pepper 1 lb x-firm tofu, cut lengthwise into 3 pieces 1 med eggplant, halved and cut lengthwise into 3 pieces olive oil
chickpea salad 1 1/2 c chickpeas 1/2 chopped black olives 1/2 c chopped red onion 1 cucumber, peeled, seeded and finely chopped 1/4 c chopped parsley 2 tbsp minced garlic
