bean curd sheets

Hi everyone
I am having real trouble finding any recipes using dried bean curd sheets. I have been wrapping up cooked vegetables and noodles in soaked sheets, but i was wanting to know if anyone knows how to make entire dishes from the stuff. I know there is a way you can fold it and layer it and maybe bake it into some kind of mock meat???Thanks

i sort of changed this recipe because my bean curd sheets were different. I soaked them in the sauce then i rolled them up and tied with string and then I deep fried them.
They were best when i made them smaller so they got more crispy, cuz the inside wasn't gooey enough. It was kind of too chewy. I think it would be better to marinade the sheets even longer, like overnight to make them really absorb the sauce.
Also, I presoaked them in plain water. Next time i would just go ahead with the marinade straight away.
They were really nice, but i just love anything deep fried! They looked really cute too, with a little cotton thread around the crispy outside.

try searching under yuba as well (it's another name for bean curd sheets).

are bean curd sheets the same thing as "tofu bamboo". There's a Soyganic store close to my home that sells it and I'm curious.

i've never heard of tofu bamboo. Bean curd sheets (or yuba) are dried sheets made from the top layer that forms when you make soymilk. It is dried and sold usually in asian grocery stores. The ingredients are just soybeans and water. It looks pale yellow and it is brittle when dry.

yes, kind of. The ones near me are kept wet, but they sound quite similar. I've had Thai dishes that employed this and I've fallen in love with it.
