Vegan Goulash with Portabella Mushrooms

Goulash is a rich paprika-based dish popular in many eastern European nations, but it orginated in Hungary. This sounds fantastic! I know where to get my hands on some sweet paprika, too. I've never made goulash before, but this looks too good to pass up!

I'm eating it right now and it is SO SO GOOD! I doubled the sweet paprika (ADVENTURE!), let it simmer for a little over an hour, then turned off the heat and added several handfuls of baby spinach to up my veggie count. We're eating it poured over long grain organic brown rice, with a generous blob of cashew "sour creme" over the top. This is a really new taste for us, and we love it!

PS: the only liquid sweetener i had was maple syrup, so i added a few spoons of regular sugar and just a dash or two of maple since that tastes pretty strong, but it came out just fine!

this recipe is my own, but goulash itself is not my invention. :)

Oh yum, it was so good! I added a bit of red pepper flakes to spicen it up a bit (I like things spicey) and it was soo good! I also added tofu cubes and eggplant.
